Definition

Cholesterol is an essential lipid composing cell membranes and a precursor to steroid hormones, vitamin D and bile salts. 80% is synthesized by the liver.

How it works

HDL-cholesterol (good cholesterol) transports cholesterol from arteries to the liver for elimination. LDL-cholesterol (bad) can oxidize and accumulate in arterial walls. Saturated and trans fats raise LDL. Soluble fiber and omega-3 lower LDL.
